1 Seedless Watermelon
2 Ripe Avocados
1 Small red onion
1 Seedless Cucumber
3 Tblsp fresh lime juice
1 Medium jalapeno
¼ Tsp Ground Corriander
¼ Tsp Ground Cumin
¼ Cup Olive oil
½ Cup Fresh Cilantro
Salt – use a good seasoning salt or Kosher if that’s what you have on hand.
Mix lime juice, olive oil, Corriander and Cumin – set aside
Dice the onion and cucumber and add to seasoned mixture.
Cut avocados into small cubes and add to the rest of the mixture.
Add additional lime juice as needed.
Cover and refrigerate.
Remove rind from watermelon and cut into thin (1/4 to ½ inch) slices.
1 slice of watermelon, sprinkle with a bit of salt and top with a good spoonful of avocado salsa and serve
Roast the jalapeno before adding to the salsa and grill the slices of watermelon for a great addition to a barbecue dinner.
